    Spot Prawn 🦐 Roe

    Hey y’all! So I jumped on the spot prawn sale from Sitka the other day. I am making risotto tonight. I noticed that some of them still have the roe attached. Would I want use it for the stock I am making or just stir into the risotto itself at the end?
    I think I answered my own question as I type, but want to hear from y’all, too.

        Oh, lucky you! Carefully scrape the roe into a bowl and serve a little bit on the servings of the risotto. That stuff is gold!

                Delicious! Two years ago at my old job, a guest of ours brought us in spot prawns that he had just caught that morning. We sliced and toasted baguette, schmeared chicken liver mousse and then topped with the roe. Divine!

              We make sushi every once in a while and I’d love to add roe. Do you need to buy special prawns or shrimp for this?

                STEbbq I purchased the spot prawns from Sitka. Some still had the roe attached. I just scooped it out with my thumb.
